Gluten Free Peanut Butter Truffle Cookies


These are AMAZING! The entire family loves them... and NO FLOUR!


1 cup creamy peanut butter

1 cup firmly packed brown sugar

1 large egg (I use two egg whites)

1 tsp baking soda

1/2 cup chocolate chips


Preheat oven to 350. Combine all ingredients except chips and blend well. Add chips. Drop slightly rounded teaspoonfulls on cookie sheet (I do greesed) and do not flatten. Bake for 10 minutes until puffed and golden. Cool for at least 5 minutes.... VERY IMPORTANT or they will fall apart. VERY GOOD!!!! They go fast around here!

Easy gluten free master mix pancakes.


This is AMAZING! AGAIN.. from gingerlemongirl.blogspot.com. These are the best pancakes. My mom and step dad ate them and really were impressed... Even Barry (gasp) said they are good!

1 cup gluten free master mix
3/4 cup milk, soy or rice milk.. what ever you use. I like using more so the batter is runnier.
1 egg or 2 egg whites


I usually throw in some syrup... this is why. I don't like dumping that sugar right on the pancakes so I put it IN the pancakes and the kids don't miss it on top..

Preheat griddle or pan. Mix all ingredients in large bowl. Spray pan with non stick spray and pour batter on. I take a spoon and spread it out a bit so it is thinner. Wait until it bubbles and flip. They puff up JUST like regular pancakes. Add some parmesian and spices and make into wraps. (see picture below) THEY ARE WONDERFUL..

EASY Gluten Free Waffles. - No picture shown.

Same as above but add 1 Tbls of oil.... whola.... waffles. Put in greesed waffle iron and enjoy!

Gluten free all purpose mix/ master baking mix is the BEST for many items. This is from gingerlemongirl.blogspot.com. I have used this for soo many things. Pancakes is the BEST... Waffles, muffins, pizza crusts.. more recipes for this to follow.

2 1/2 cups brown rice flour
1 1/2 cups certified gluten free oat flour or millet flour (can use either)
1 1/2 cups tapioca flour
1 Tbsp + 1 tsp xanthan gum
2 tsp salt
3 Tbsp baking powder
1 1/2 cups powder milk
1/2 cup shorting (Butter one is best)

In a large bowl whisk all items together except shortening. Cut shortening into small pieces and cut into flour mixture. It will look like very tiny peas or specks of shortening through mix. It is AMAZING MIX. Use it with anything that calls for bisquick.

Easy Gluten Free Sandwich Bread

Dry Ingredients
2 1/2 cups Brown Rice Flour
2/3 cup Cornstarch
2/3 cup dry milk powder
1Tbls xanthan gum
1tsp salt

Wet Ingredients
1 3/4 cups warm water
1 pkt active dry yeast
2 Tbls veg oil
2 large eggs

In a small bowl, combine water and yeast. Stir to combine.
In a medium mixing bowl, whisk together dry ingredients.
Add yeast mixture, vegetable oil and eggs.
Using an electric mixer, mix dough for five minutes on medium high speed.
Lightly grease a 9X5 inch loaf pan with vegetable spray.
Spread batter evenly into the pan.
Lightly grease a piece of plastic wrap and cover the pan.
Allow dough to rise for 1 hour.
Prehead oven to 350 degrees F.
Bake dough for 55 minutes or until internal temp reaches 208-211.
Remove bread from oven and allow it to cool in the pan for five minutes.
If you can wait.. wait five minutes and turn bread onto rack to cool completly... I can never wait until it is cool... we eat it warm with peanut butter and jelly!
